In addition to interesting fruits, Peru also has intriguing but nonetheless delicious main courses. Most include potatoes because the Incas were the first cultivators of the potato. Many dishes are also served with aji panca--a pepper very famous and very commonly used in Peru. Ground up or used in a paste, this pepper will add a spicy kick to any dish it is served with. Causa and papa a la huancaina are both potato based dishes. Causa its a sort of mashed potato wrap with chicken salad inside. Papa a la huancaina is cooked potatoes with a yellow sauce served along side it. Another delicious and extremely popular dish is called ceviche. This dish consists of raw fish cooked overnight in lemon juice. Although it may sound strange, this is an extremely popular dish with both tourists and natives alike. |
